August produce meets BBQ season — you can make these so many different ways! Smoked, grilled, slow cooked, or baked. This recipe creates delicious ribs with a unique watermelon marinade, dry rub, and homemade BBQ sauce.
1. Marinate ribs in watermelon and lime juice for at least 1 hour before cooking.
2. After they have marinated, massage the dry rub onto all sides of the ribs.
3. Arrange ribs on a foil-lined large baking dish and tightly cover with another layer of foil.
4. Bake at 300F for 3-4 hours, until internal temperature has reached 205F.
5. While ribs are baking, prepare the BBQ sauce: combine watermelon juice and brown sugar over medium heat in a large saucepan. Let simmer for a few minutes before adding all other ingredients. Let come to a boil for 1 minute and reduce to a gentle simmer for about 15 minutes.
6. Let the BBQ sauce cool and adjust ingredients to taste; you may want more vinegar or sugar.
7. Brush the BBQ sauce onto ribs before serving. Enjoy!
