DAY 2 of creating & taste testing old fashioned, traditional Christmas recipes🕯️👩🏼🍳🎄
OYSTER STEW scoring a solid 9/10
I love this recipe for seafood chowders, but I think I’d prefer this stew with clams and enjoy my oysters on shell🦪
1. Start by draining your oysters over a bowl with a sieve and rinse over cold water to remove any sand or shell pieces. Reserve oyster juice and set aside, rough chop oysters.
2. Heat a large pot over medium high heat. Add 3 tbsp butter and melt until frothy. Add celery, shallot, garlic & potato and sauté for about 3-4 mins. Reduce heat to medium and add flour, salt and old bay.
3. Cook, stirring constantly until toasted slightly. Slowly add the reserved oyster juice, stirring to scrape up the toasted bits from the pot. This will be quite thick.
4. Now slowly add the milk a little at a time, stirring constantly. Bring pot to a gentle simmer for about 10-15 mins until potatoes are tender.
5. Add oysters and cook for another 2-3 mins. Serve with fresh parsley, oyster crackers and Tabasco sauce.
