LINGUINE WITH CLAMS 🍋

1. Scrub clams clean of any sand. Cook linguine in a large pot of boiling salted water.
2. While pasta is cooking, heat 1/4 cup butter over medium high heat in a large pan. Once butter is melted, add garlic and sauté until fragrant, about 1-2 minutes.
3. Add the white wine, lemon juice and clams. Cover and steam for about 5-8 minutes, shaking the pan occasionally. Discard any clams that did not open during the steaming process. Place clams in a large separate bowl and cover with a plate to keep warm.
4. Strain your linguine noodles, reserving 1/2 cup pasta water. Add your noodles to the pan of broth. Along with 3 tbsp cold butter. Coat & cook over medium high heat for about 2 minutes, stir in any pasta water if noodles look dry. The sauce should be brothy but also cling to the noodles.
5. Transfer clams back into pot. I leave half in the shell for presentation. Add fresh parsley, lemon zest and Parmesan. Serve immediately.
