DAY 4 of creating & taste testing old fashioned, traditional Christmas recipes. This Heirloom Fruitcake is rated 5/10 based on personal preference, but it's a great traditional recipe to follow if you're in search for a fruit cake.
1. Preheat oven to 250 F. In a large bowl, combine your dry ingredients of sugar, flour, salt, baking powder and baking soda. Whisk to combine and set aside.
2. In a small bowl, combine eggs, egg yolk and vanilla, stir to combine & set aside. Using a large mixing bowl, add pecans, dates and candied fruit. Add dry ingredients and mix with your hands. Add eggs + vanilla mixture and mix again with your hands, it will be sticky.
3. Transfer to a 9x5 loaf baking pan lined with parchment paper and place on top rack of oven. Add a pot of boiling water below the loaf pan on the bottom rack so that steam fills the oven while baking. Bake for 1 hr + 45 mins.
4. Allow to cool before enjoying.
